Hawthorn Berry and Rosehip Ketchup

  • 1 Fine Mesh Strainer Or cheesecloth

Ingredients

  • 1 cup Hawthorn Berries If dry, soak for a couple of hours in clean water
  • 1 cup Rosehips If dry, soak for a couple of hours in clean water
  • 2 cups Water
  • ½ cup apple cider vinegar
  • ¼ cup honey (or to taste)
  • 1 teaspoon salt
  • 1 teaspoon cinnamon ground
  • ½ teaspoon cloves ground
  • ½ teaspoon ginger ground

Instructions

  • Prepare the Berries: If using dried hawthorn berries and rosehips, soak them in water for a few hours to soften. If using fresh, rinse well.
  • Cook the Mixture: In a saucepan, combine the hawthorn berries, rosehips, and water. Bring to a boil, then reduce heat and simmer for about 30 minutes until the berries are soft.
  • Strain the Mixture: Use a fine mesh strainer or cheesecloth to strain the mixture into a bowl, pressing down to extract as much liquid as possible.
  • Add Remaining Ingredients: Return the strained liquid to the saucepan. Stir in apple cider vinegar, honey, salt, cinnamon, cloves, and ginger. Bring to a simmer.
  • Thicken the Ketchup: Simmer for an additional 15-20 minutes until it thickens to your desired consistency.
  • Cool and Store: Allow the ketchup to cool before transferring it to a clean jar or bottle. Store in the refrigerator for up to two weeks.
