Za'atar
Za'atar is a savory spice blend from the Middle East that typically includes dried oregano, thyme, sumac, and toasted sesame seeds. The exact combination and proportions of spices can vary by region, and some recipes are closely guarded secrets. Other ingredients that might be added include hyssop, dill, orange zest, cumin, coriander, or chili pepper.
